Ingredients A:

2 pieces (10g)

Red chilies, remove stem, blend

2 pieces (5g)

Birds' eye chilies, blend

2 cloves (15g)

Garlic, blend

1 medium (20g)

Onion, blend

1 inch (10g)

Ginger, blend

2 small sticks (10g)

Lemongrass, blend, cut into small pieces

1 tbsp

Curry powder

1/2 tbsp

Turmeric powder

1 tbsp

Tamarind paste

2 pieces

Kaffir lime leaves, remove stem and slice them

1 tsp


Ingredients B:

2 pieces (300g)

Mackerel fillet, cleaned

1 piece

Banana leaves, cleaned and soften

1 piece

Aluminum foil, 20-30cm long

2 cups (200g)

Cooked brown rice

6 pieces (50g)

  • •  Combine all ingredients A (blended ingredients, curry powder, turmeric power, tamarind paste, kaffir lime leaves and salt) in a bowl and mix well.
  • •  Cut and clean a piece of banana leaf around 8 inches. Place on an aluminum foil.
  • •  Preheat air-fryer in 200 degree celsius for 3 minutes.
  • •  Layer half of ingredients A on the banana leaf, put fish fillets and top with the rest of ingredients A
  • •  Fold the aluminum foil neatly and cook in the Air fryer with 200 degree celsius for 25 minutes.
  • •  Serve with cooked brown rice, lettuce and lime for extra taste.
  • *Tips: Soften banana leaves by holding them directly on top of a burner, moving it slowly to heat until the whole leaf becomes glossy.
